Easy lamb roast meal whilst camping? Yes please! This is an all time COBB favourite - Lamb roast. You really can't beat a lamb roast cooked on the COBB.
What you'll need: Any COBB Grill model, Roast Rack & Griddle+ ( or Aluminium Grill Grid) accessory. Dome extension accessory optional. This is a super easy set & forget recipe that is guaranteed to impress your campsite mates!
- Lamb roast ( leg or shoulder ). If the lamb leg is too long for your COBB, cut the end bone off so it fits under the dome cover.
- You can also use the Dome Extension accessory to roast a bigger cut of meat
- Salt, pepper, garlic, olive oil (rosemary is a bonus)
Directions
- Pre-heat your COBB Grill. Light your Cobblestone charcoal, or turn on your COBB Gas to high heat for 2 mins. If you are new to using the Cobblestone charcoal, make sure it's fully lit and has stopped smoking ( 2-5 mins after lighting) before you place any food on the COBB Grill.
- Place the Griddle+ and Roast Rack accessory onto the COBB.
- Season your lamb whilst COBB is pre-heating. Rub a mixture of salt, pepper, garlic, rosemary & olive oil all over the lamb. Place on top of Roast Rack and cover with the dome cover.
- Leave it on high heat for 10 minutes, then lower to low-medium heat if you are using the COBB Grill Gas.
- If you're looking, it's not cooking! After 35 minutes, open the dome cover and turn the lamb around. Leave to cook for another 35 minutes or longer.
- Depending on how cooked you like your lamb and the size of the roast, leaving it roasting in the COBB for 1 - 2 hours.
- After cooking, remove it from the COBB and place on to Bamboo Chopping board to rest for 15 minutes, covering it again with the dome cover.
- Once rested, slice using a nice sharp knife and serve with mustard or mint sauce.
